Beer and cheese? The very idea is enough to make many a wine aficionado spill their prized Bordeaux. Yet, historically, the pairing has been a common one, particularly in Northern Europe. English, Irish and the new breed of American Stout all get their wonderful characteristics from two things. The first and essential element is the ingredients, such as the chocolate, caramel and black malts, which are roasted, adding a slight bitterness and depth of flavor. The second step, of course, is the recipe and method of production. All great stouts share the same complex characteristics and a natural affinity to artisan cheeses.
